Ernst Knam: "Degustare è viaggiare senza moversi."

Ernst Knam was born in Tettnang in 1963. He studied at the Deutsches Hotel Institut and began his career in Scotland in 1987 at the Gleneagles Hotel’s Eagle's Nest Restaurant, holder of one Michelin star. He went on to the Dorchester’s Terrace Restaurant in London and to the restaurant Le Cygne in Geneva -both awarded two Michelin stars. Gualtiero Marchesi in Milan, where Knam spent three years, holds three stars.

Says Marchesi about his former colleague: "I appreciate Ernst for his professionalism and his kindness. This combination makes him a rare and special person."

In 1992, Ernst Knam opened his patisserie "L’Antica Arte del Dolce" in Milan. Four years later, he followed suit with "La Nuova Arte del Catering", which numbers renowned companies such as Dolce Gabbana and Louis Vuitton among its customers. His book "Soufflé" won the 1998 prize for "best foreign language pastry book" of the "International Cookbook Review". His recipes are included in numerous other cookery books and articles have been written about him in leading magazines. He has earned further distinctions during his three participations in the "Toque d’Or" in Lucerne, twice winning the first prize in the category "pastry".

At Barilla’s request, Ernst Knam is thinking up new possibilities for the presentation and use of pasta.

And now, he has created the top-of-the-range collection "Le Creazioni del Pasticciere" for Giolito.
